Along with the kyūsu (teapot), the yuzamashi is one of the essential tools for brewing Japanese tea. Before pouring it into the teapot containing tea leaves, pour boiled water into the yuzamashi. The water temperature will drop by about 10°C instantly. Wait for about a minute and the water will be about 70-80°C (160-175°F), which is general considered to give a perfect balance of the four taste elements of Japanese tea; umami, sweetness, astringency and bitterness.
These stone ware yuzamashis are made in molds by the renowned Takasuke kiln in Tokoname, Aichi Prefecture, Japan. Being easy to use, the series is a favorite among certified tea instructors in Japan. Their simple design is also praised for being easy to match with many different teapots.
